Phathwa's Winter Beef Curry


2 table spoon all-purpose flour
Salt and freshly ground black pepper
200g Fresh ginger
2kg lean beef cubes
Onion coarsely chopped
8 Garlic cloves chopped/crushed
6 Carrot chopped
4 tablespoons paprika
4 tablespoons coriander ground
8 Large potatoes, peeled and chopped
6 Tablespoon tomato paste
Beef stock
4 tablespoon chopped rosemary preferable fresh
6 Fresh large tomato chopped
200g Leeks chopped
Worcestershire sauce
Cucumber chopped


Heat the oil in the large saucepan over medium heat add the chopped onion, garlic, leeks chopped carrot, and ginger fry until translucent, after that add paprika, coriander ground salt, and pepper with chopped tomato, stir it to avoid it from burning after that add tomato paste stir more than add seared beef cubes mix properly after that add beef stock and stir well.
Put potatoes and simmer for another 20munites on low heat.
When it is cooked season it with Worcestershire sauce.
You can serve it with savoury rice or couscous.
